
I’ve fallen in love with Palm Sugar. Palm sugar is made from the flower nectar of the good old coconut (the coconut palm really is the plant that keeps on giving). It is made from nectar harvested from coconut blossoms, which is then boiled to stabilize it and stop it fermenting, then dried and packaged. This of course means that Palm Sugar is not raw – this has been something I’ve been trying to work out, as there seems to be some confusion and conflicting information around, but I’m pretty sure I’ve come to the right conclusion finally. Interesting! I just learned something about my blood pressure. I haven’t taken my blood pressure since returning to a mostly raw food diet, but thought I’d see if there was any change and so took a reading a little while ago.
Since I got my blood pressure monitor a couple of years ago, I’ve always had fairly low blood pressure. Usually around 105/63 ish. My heart rate stays fairly low also these days – around 60 beats a minute and first thing in the morning it was around 55 beats a minute the last time I checked. [...]
